Sweet potatoes come in a variety of sizes and colors — including orange, white, and purple. The nutritious root vegetable is grown worldwide and can support a variety of health functions. They are known to foster a healthy digestive system and help vision, but did you know they can also help increase your immune system. Follow our meal prep recipes and recreate them with your choice of sweet potato or yam.
Ingredients & Tools:
-3- 4 White Sweet Potatoes
-Olive oil
-Seasoning salts
-Essential+ Small Kitchen Knives
-Nonstick roasting pan
Ingredients to pair with Sweet Potatoes:
-2 eggs
-1 avocado
-Fetta cheese
-Sliced almonds
-Teriyaki sauce
-Cooked kale
-Balsamic glaze
Oven Roasted Sweet Potatoes (Base of meal prepped recipes below:)
-Preheat oven to 425° F
-Peel sweet potatoes using the Essential+ Peeler.
-Coat with vegetable oil and stir in course salts, basil and any other seasonings.
-Pour potatoes onto a nonstick pan.
-Check after 25 minutes and stir pan.
-Cook for an additional 10-20 minutes depending on how crispy you prefer the potatoes.
When the roasted sweet potatoes are finished cooking, let them cool. Divide equally into separate containers and reheat in the microwave when ready to enjoy. Oven roasted sweet potatoes are a versatile ingredient that can be enjoyed individually or with a few other ingredients. Use them to add variety and nutrition to your breakfast, lunch or dinners— in minutes.
With the oven roasted potatoes as your base, use them in different combinations for meals that can be put together in minutes.
In the morning: Combine white sweet potatoes with egg (sunny-side up or over easy) and avocado.
In the afternoon: Pair sweet potatoes with feta, sliced almonds and drizzle with teriyaki for a filling and delicious warm lunch bowl.
For a quick dinner: Try mixing the sweet potatoes with cooked kale, feta and balsamic glace.
Our French style stuffed peppers are another dinner recipe that can be prepped ahead of time for your convenience. We can't guarantee you'll have the will to save them for later after you get a smell for how delicious this recipe is! Make the recipe vegetarian with a few alterations.
Ingredients & Tools:
-1 c. uncooked white long grain rice (Do not use minute rice)
-1 (10 oz) can of Condensed French onion soup
-1 (10 oz) can of Beef broth
-9x9 inch pan
-1/2 cup of butter
-1 yellow onion
-8oz mushrooms
-Olive oil
-1 lb ground turkey (optional)
-Essential+ Small Kitchen Knives
-9x18 inch pan
-Grated gruyere cheese
French Inspired Stuffed Peppers:
-Preheat oven to 425° F
-½ c. of butter, sliced
-In a 9x9 inch baking dish combine rice, soup and broth. (You can also use vegetable broth if you don't eat meat.)
-Cut butter into slices and place on top of the mixture.
-Cover with foil and bake for 30 minutes.
-Remove cover and bake 30 minutes more.
-While the rice is cooking caramelize a yellow onion and 8oz of mushrooms in olive oil. We also cooked 1lb of ground turkey to mix into our rice filling. Skip this step of you want to make the recipe meat free.
-Slice the top off of the peppers with the Essential+ Serrated Paring Knife. Cut out the seeds and trim insides of pepper. Don't forget to save the tops of the peppers.
-Separate the top of the peppers from the stem of the pepper and dice.
-When rice has cooked and cooled mix in diced peppers, caramelized onions, mushrooms and ground turkey (optional). Pour any liquids from caramelized onions and mushrooms into mushroom mixture.
-Fill pan with a quarter inch of water and preheat oven to 400°.
-Peppers that can't stand on their own can be sliced in half and filled with rice mixture (see video for example.)
-Fill peppers with rice mixture. (Any extra rice mixture can be baked in a separate pan and enjoyed later.)
-Place in oven and cook for 25 minutes.
-While peppers are cooking grate gruyere cheese.
-Sprinkle onto peppers and pan of rice. Cook for 5 minutes more.
