If there was only one knife we’d consider a must-have in the kitchen, it’s the paring knife. But when using carbon steel in the kitchen, it’s important to keep it well-oiled, dry the blade right away, and do NOT leave it under water or wet to avoid corrosion.
This multi-purpose knife has a smooth 3.75 inch blade that ensures a perfect and precise cut. The varnished beech wood handle protects against moisture and dirt, making it a durable product. Set of 2 paring knives.
Hand wash only. Do not immerse your knife in water, as this could warp the wooden handle. Do not wash the carbon blade by running it under water, simply wipe it down after use. If wet, immediately dry the carbon blade with a soft, dry towel. Lubricating the carbon blade with a food safe oil before closing the knife is recommended (this prevents oxidation). Over time, carbon steel can develop a patina and may possibly show some corrosion, depending on use.

I bought one of these on a trip 3 years ago because the house we stayed in had a dozen knives, but not one sharp one. And i cook a lot. Picked one of these up because I've heard good things about opinel, but never had one. Man, we have exceptional German knifes, with bougie handles and a block that self sharpens. I still reach for this opinel everytime. It holds a good edge. Run it through the little ceramic sharpener once or twice and go. I just cut up 15 tomatoes with it. I bent the tip of the blade once doing something I shouldn't have. I bent it back with my pliers and kept on getting it. The next pocket knife I get will probably be the opinel folding equivalent of this
Excellent……I’m a fan of carbon steel blades, blade discoloration not with standing…they’re as good as my wife’s German-made paring knives….and with a set of two there’s always one handy…easy to sharpen…I have an Opinel no.8 carbon steel folding knife….Opinel is all I’ll buy from now on….
Great medium sized paring knife that is superbly sharp and well made..
I've owned four of these since 2006. The first pair were appropriated by a visitor who apparently loved them more than I. So I purchased the second set. I would not be without these knives in my kitchen if at all possible. I love carbon steel knives, in large part because of how easily one can create a fine edge, and secondly because of their size they are useable for so many different jobs in the kitchen from working vegetables and fruits to cutting and cubing and cleaning meats and chicken. My kids like them so well they use them in place of the old standard steak knives. Honestly, so do I. I guess I'll have to order a few more sets.
There is something special about a classic high carbon blade, developing a beautiful patina. As you use it you see old work, where you cut something that leaves unique patterns. When you touch it up it feels different on the the stone compared to stainless and comes back to sharp very quickly Over all this is a knife that is hard to beat and you will be glad you bought a pair, but be warned it may just kick of a quest for more high carbon blades.
