I spent many hours researching information on a santoku knives. I came across a review I think it was on Milkstreet and Opinel was mention as an excellent knife. On many camping trips people I knew had Opinel knives and they looked and worked beautifully. This is the second Opinel ( the second was a gift) I have bought and they both are fantastic and do the job in the kitchen. They feel good in my hand and I use my knife all day long since I cook for a living. I highly, highly recommend these knives!
I have been a fan of Opinel folding knives for decades. Recently, I bought a set of kitchen knives and loved them. Added the santoku to expand utility. The first day using it, I was chopping some sage for soup and cut off the tip of my thumb. With any exceptionally sharp this is a possibility, for sure, however I know of at least one other person who experienced this same injury with an Opinel kitchen knife. I wonder if the commitment to light weight handles makes the knives easier to cause an injury? I love the lightweight folding knives when I go backpacking in the mountains, but in the kitchen? I will continue to use these knives, more carefully, but I cant help but wonder if a thicker full tang would help balance these knives out? This is just my hunch. Overall I have no issues whatsoever with the quality of this product. These are just my thoughts for consideration. Thank you.
