Bought a couple of these to use as steak, paring & general utility knives around the kitchen. Nothing fancy just thin sharp blades that cut really well, with a basic wooden handle. The blades are made from 12C27 steel the same as the stainless version of the classic Opinel folding knives. Along with 14c28n it's one of my favorite budget steels. Not the best at holding an edge but is tough and very easy to sharpen. There's a reason Opinel has been around since the 1890's and have a huge following all over the world. They make good knives at very affordable prices, bang for your buck wise they're hard to beat.
A dear friend brought me back one paring knife from Paris several years ago because it was his favorite to work with in the kitchen. I LOVED it and decided to find more so I always have one at the ready. Light, sharp, beautiful and so useful.
